Caramel Pudding

I love pudding.  Back in the day I used to love that instant boxed pudding.  I would whip me up a batch of it in no time and devour it.  Now that I am older and a chef, that seems gross.  Actually, it is gross.  I have since upgraded to cooked puddings. Made from scratch puddings.  My favorite is caramel.  Mmhhmmm!  You put some whipped cream and graham cracker crumbs on it and it is scrumptious.  I made 2 big batches tonight.  Unfortunately, or maybe fortunately, it is not all for us to eat at the house.  Mom is helping with lunch at school tomorrow and is going to take pudding.  So I made enough for probably 40 people or so.  Lots of pudding.  Hopefully the school kids / church ladies that are there sewing won't eat it all.  I want to eat more.

Coffee cookies

Whenever I bake something I seem to want to keep baking.  Even though I'm not the best at it, I kind of like to bake.  There, I said it.  I think I'm getting better at it.  I made coffee cookies tonight.  They are good.

Pizza 1-8-11

I made pizza for dinner tonight.  First time I ever made pizza all by myself.  I made the dough from scratch.  That alone is a major feat because I am not good at working with bread.  It actually wasn't as bad as I though it would be.  Pretty easy actually.  At Janina's request I made a chicken and ranch pizza.  I also made a supreme pizza I guess you could call it.  It had pizza sauce, sausage, pepperoni, onion, bell pepper, and cheese.  I think they turned out very well for it being the first time I ever made pizza with no help.  There could have been more ranch dressing on the chicken and ranch pizza.  Oh well.  First time making that kind so I didn't know how much to put on.  If we ever make it again we will use more ranch dressing and add some veggies.

I now want to make Chicago-style pizza, aka deep-dish pizza.

Hello, it's my first time leave the comment on your blog I think your pizza looks really great :)! (I am going to try to make it when I have time!) wow, that must be nice graduating with a degree of culinary art! I always have a passion for food ^_^ and also cooking and baking~ Did you also learn baking in Stratford University?

I took 2 baking classes at Stratford. It was required for my degree. They offer a degree in baking but I didn't go for that. Baking isn't really my thing, although I can somewhat bake. Cooking is more my thing.

I am a line chef now at the Black Bear Bistro in Warrenton, VA. www.blackbearbistro.com I cook lots of different stuff at home. Love to make lasagna. It's my favorite food.

that Bistro looks really good!!! I'd like to give it a try...but it's only in Virginia... Working in a restaurant must have lots of fun :) lasagna is good!

Potato and Ham Soup

A couple days ago I made potato and ham soup for dinner.  Mom wasn't feeling good because she had a migraine, so I whipped up a batch of soup.  I used leftover ham from our Christmas dinner.  It was delicious.

Roast Beef with Mushroom Gravy

Yesterday Mom put a roast in the crock pot.  Then I finished the rest of the meal. We had some mushrooms in the fridge that I wanted to use so I made a mushroom gravy.  I also made mashed potatoes and heated up some green beans.  It was amazing if I can say so myself.  The mushroom gravy made the meal.  Even my siblings, who though they did not like mushrooms, loved it.  I know why that is. Umami.  Mushrooms have umami, which is one of the five basic tastes.  It's good.

Minestrone

We have somewhat of a tradition going on in the Schrock household.  Every Christmas eve we have a special soup and bread for dinner.  Tonight we had Minestrone.  Because I had to work this morning, I made it last night.  I was also going to make Brioche but didn't have time because we are so busy at the Bistro lately.  So Mom was going to make it, but then she didn't have time.  If you know anything about making Brioche, it is a long process.  The end result is very, very good though.  So instead of Brioche we had cornbread rolls that Mom made.  I am going to finish the Brioche tomorrow and then we will have it with our Christmas dinner.  We also had Caesar salad tonight.  I looked online for recipes that don't call for eggs or anchovies, because we didn't have any anchovies and because I didn't want to use raw eggs.  It turned out pretty good.  I like it.  Homemade croutons to top it off are good too.

Meatball Subs

Sorry for the lack of updates as of late.  It's the holiday season so that means lots of work at the Bistro.  I did cook dinner tonight after work.  We were thinking about just heating up some soup, but I kinda sniffed at that.  I asked Mom what all we have to make stuff with.  She mentioned meatballs....meatball subs.  So I whipped them up in no time.  Heated the meatballs in pizza sauce and warmed the bread.  I made a little salad with lettuce, mushrooms, and carrots.  Then assembled the subs.  It was good.  It was quick to make.  That is good.
